We’re In The Middle – Getting Ready for the Summer Months

This month I committed to writing every day for the month of May, for NaBloPoMo and that is what I will do; this month’s theme is “nourish”.
The weather is getting warmer and the thought of wearing fewer clothes is bumming me out.
I started walking again at lunchtime and at night after dinner. This tiny little exercise… is nourishing me… I feel good getting back in shape, eating the right foods, or eating a balanced meal. In my head, I am planning some good summer meals, planning to take advantage of the warm nights and longer days … firing up the grill, inviting friends and family over and reconnecting; it is a nourishing thought.
I’m also daydreaming of evenings of going for a swim in our pool or having a family night at our town beach

Before all of that, I will be making more of these….
Salads
Tomato Salad
Ingredients
Tomatoes (preferably plum or Roma tomatoes)
For a bowl that size and a family of four I used 4 or 5 tomatoes
½ of Red Onion
Salt
Fresh Basil
Crushed Red Pepper
Or ½ of a hot pepper (seeded)
Extra Virgin Olive Oil
Italian Bread
Slice tomatoes in thin wedges into the bowl
Sprinkle a good pinch of salt and crushed red pepper the salt actually draws out juices from the tomatoes (that’s a good thing)
Slice thinly the ½ of a red onion
4 or five good size basil leaves, place them on top of each other roll up like a cigar and cut into thin slices (chiffonade) add to the salad
Sprinkle a tablespoon extra-virgin olive oil, and stir
Serve with bread …the bread is to soak up all that juicy goodness.
