We are having Pizza …again!
Saturday was pizza night…..after running around all morning and afternoon and fantasizing about Beignets but then settling for Sfingi…hey love the one your with! I made pizzas for dinner…I made three. I always tell the kids since I am home; not working, Saturday dinner should be fun dinners!
Spinach Pizza with Bolognese Sauce – I did not have any marinara sauce prepared, but I had a Bolognese sauce ….Nick absolutely loved it! I added the spinach because …well first, I had the spinach, and secondly why not! I love the layering affect. I had some Bolognese sauce left over from last week, I thought it would be yummy on pizza sprinkle some mozzarella cheese, that should be good right? What if I add spinach….sure sounds good. The spinach was sauteed in olive oil with two cloves of garlic sliced, seasoned with a small pinch of salt and black pepper, about less than a ½ of teaspoon of crushed red pepper flakes and ½ teaspoon of grated nutmeg. I used two boxes of frozen spinach….. saute, mix well, when ready place it on top of the pizza and add mozzarella. Layer the ingredients as follow; sauce, spinach and cheese. In the oven at 450 bake until the cheese melts and the crusts turns golden about 10 to 15 minutes. All ingredients were placed on a raw pizza dough, and the sauce was warmed on the stove for a bit.
White Pizza, Amelia and James requested it ….I sprinkled white Truffle oil on top when it came out of the oven. This takes a little longer, more like twenty minutes….there is a raw egg in the cheese mix. It needs to cook longer. The pizza dough was placed in the oven for about 5 minutes before I added the cheeses.
Last pizza is called Pizza con Risimude; a Calabrese specialty….so my parents made their own sausage a few weeks ago. Risimude, as they call it is a by-product from making sausage. I believe Risimude are the pork renderings….I know, not the healthiest but a dab here and there on the pizza dough …so yummy!
