Still Here!  Crock- Pot Corned Beef !

Did everyone have a nice weekend? Did you all have a Happy St. Patrick’s Day!

Our weekends go way to fast, it’s all a blur!

Although we are not Irish, we did enjoy two St. Paddy’s Meals!

 

 

 

I made Shepherd’s Pie on Saturday night because James requested it!

We had Irish Soda Bread!

 

 

 

I wished I taken pictures of my family!  (I promise I will….or try to remember to take more pictures of them.)

Sunday is my cooking day, the stove and the oven were  being used for our weekly meals, I didn’t know how and when I would make the Corn Beef and Cabbage!

I decided to make it in the Crock- Pot!  – Yay that works!

 

 

Crock- Pot Corned Beef !

Printable Recipe

4 large potatoes peeled and cut into chunks.
3 carrots peeled and cut into chunks.
1 head of cabbage + 1 small onion (used with the cabbage)
2 1/2 lbs Corned beef  fat trimmed plus pickling spices it comes with.
1/2 bottle of stout or dark beer.
Water to cover

Layer your vegetables (not the cabbage) on the bottom of the crock-pot place the corn beef on top of the vegetables.
Sprinkle the pickling season.
Pour the beer on top and then add enough water to cover.
Cook on high for 4 hours. During this time check on it, skimming any foam that rises.
After 4 hours slice up the cabbage, saute in olive oil with a pat of butter, and one small onion sliced.
Fry until the cabbage is wilted and browned along with the onion.

The meat was so tender, the potatoes and carrots had a hint of the Guinness!

 

Truly fork-tender!
