We are celebrating Thanksgiving at my parents’ home this year, they will make the turkey, along with some wonderful sides…my mom will probably make a pasta dish as well; either Manicotti, Lasagna, or Tagliatelle it’s what she does and of course delicious! Stay tuned more on our Thanksgiving holiday. 
 
My job is to make the cranberry sauce and Brussels sprouts. I use Ina Garten, The Barefoot Contessa’s Cranberry Sauce recipe every year. It is easy, I saw her make it on TV when the show first aired in 2002, and I have made it since then. Last year was the first time that I split it into two portions, added chopped nuts and raisins to one, and left another portion plain as mentioned in her recipe or on the show. I think we joked about it and kept singing, “Sometime you fell like a nut…”
 
I make Brussels sprouts because it’s a vegetable that was not made when I lived at home. Therefore I wanted everyone to try it…I first ate Brussels Sprouts at my mother-in-law’s house, and loved it; my mother-in-law’s recipe is she boils them. I have made them many ways, but simply oven roasted seems to be everyone’s favorite. 
 
Now back to the cranberry sauce, it’s simple, it’s quick and very tasty… love the color, just like ruby gems! 

 

 

Cranberry Fruit Conserve

4 cups
 
Ingredients:
 
1 (12-ounce) bag of fresh cranberries, cleaned
1 3/4 cups sugar
1 Granny Smith apple, peeled, cored, and chopped
1 orange, zest grated and juiced
1 lemon, zest grated and juiced
3/4 cup raisins
3/4 cup chopped walnuts or pecans
 


Directions:
 
Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat and add the raisins and nuts. Let cool, and serve chilled.

I have made this recipe since 2002 or 2003,  I figured back then that it is quite tasty and easy to make, and lack of a better word healthier….Cranberry Fruit Conserve by The Barefoot Contessa, super yummy!!!
