In a pinch…dinner
– could be dinner or not…try it as a snack or lunch…probably its true intention.
We have it for dinner; that’s how we roll sometimes.
My sister gave me this idea a while ago – so far, we’ve done this a couple of times for dinner.
It’s quick and, I think it is wallet friendly
The supermarket I shop at always has a deli meat with cheese combo special. Sometimes it’s Boars Head Buffalo Chicken- Pepper Jack Combo, or it is Turkey and Swiss; last week it was a Roast Beef with Provolone Combo – prices ranges from $5.99 to 8.99 a pound – we can ask for half meat half cheese or 2/3 meat and 1/3 cheese. We always tell the deli worker more meat, less cheese.

Dinner is served
Assemble deli meat of choice on tortillas, I placed three slices of Roast Beef and one slice of provolone cheese, added some more shredded cheese, whatever I had on hand (mozzarella), folded the tortilla and lined them up onto a baking dish.
I made four of these; I also had three breaded chicken cutlets, left over from last night’s dinner, which I cut up and combined with a slice of Swiss Lorraine cheese that I also had. I made three of those.
In the oven at 350 for less than ten minutes, once I see the tortillas browning they are ready.
On the side was our favorite, tomato and avocado salad.
The combinations are endless…

Thank you Poppy – this dinner was too quick to make that my son was surprised- Mom can I go play with my Xbox; ok but just until dinner, 10 minutes later, I call him dinner is ready! LOL !
