It is Cinco De Mayo
In our home, we love Mexican Cuisine so I will be serving some this evening… we celebrate many holidays and we welcome holidays that are not of our heritage. I want our children to embrace these holidays as well…and have fun!
So today, I would like to share some of my favorite Mexican recipes:
Tacos tonight my family enjoys this recipe, I love putting it together, and it travels well!
Spicy Black Bean Soup
Avocado and Tomato Salad
Quesadillas (Cheese, Vegetable, and Beef)
The beef Quesadilla is the same recipe that I use for the Vegetable Quesadilla recipe. I add beef strips or skirt steak after I sauté the onions and peppers.
I’m making them tonight, I will post the recipe soon.
Last but not least, I have added a Margarita Recipe.

We are not Mexican, but I love to celebrate with my family the different cultures all over the world…we enjoy Chinese New Year, St. Patrick’s Day, and any holiday that involves food and a celebration.
When my children first went to school, they were second language students, although the program has helped them tremendously. The one thing they did not have at one point is a second language and eventually, they only spoke English. They did not live in a home with two languages, having said all of that, their fellow classmates were from various backgrounds, cultures, and ethnicity which helped them learn about diversity and also similarities with other children.
They would come home and tell us all about being the dragon at the Chinese New Year parade; or when my daughter ate potato latkes, and that James tried Naan bread from his friend at lunchtime.
I want my children to see and taste all the wonderful cuisines that are out there.
