We had a wonderful and quiet weekend, I was home on Friday; took a spur of the moment vacation day (by spur of the moment I mean, I asked for it on Tuesday, rather than weeks ago)

My friend Laurie texted me; asking what were we doing on Friday, her son missed my kids. I responded, I have to run errands but if you don’t mind having my kids come get them.  We ended up talking on the phone, sometimes texting just doesn’t  work.  We planned for a play-date; she picked up James and Amelia and they hung out with her son Dr. Seuss; around 6:30 that evening they all came back for dinner.
 
 While Laurie had the kids and brought them to the park, I did a food shop, and Easter shop!

Laurie and Dr. Seuss are vegetarian so when I asked Dr. Seuss what he wanted for dinner he asked for Black Bean Soup and Vegetable Quesadillas; of course, I also made a Tomato and Avocado salad. 

 
 

 




 Vegetable Quesadillas

Printable Recipe

 5 or 7 mixed peppers red, yellow, Orange and Italian frying peppers or Cubanelle sliced.
1 Sweet Onion, large one (size of a softball) sliced
2 or 3 large Zucchinis chop – roughly
8 oz. of sliced mushrooms
Olive Oil
Salt and pepper to season
2 Tablespoons of Cumin
½ of teaspoon of cayenne pepper (optional)
1 lime
Shredded cheese (Mexican blend)
In a pan, coat the bottom with some olive oil, add the sliced peppers and sliced onions, season with a pinch of salt and black pepper.  Cook until just softening, then add the zucchini, cook together mixing everything  together, add another small pinch of salt and black pepper,  continue to cook until softened last, add the mushrooms  mixing and stirring together, add the 2 Tablespoons of cumin and ½ of teaspoon, less or more of cayenne (optional).  Once all the vegetables are cooked and the onions are caramelized, squeeze the juice of ½ of the lime.  
About the lime,  I forgot to buy limes last week,  I found  in my basket two limes;  they were quite hard and do I dare say old looking….in a pinch I stuck them in the microwave  for 10 seconds which worked, I was able to get juice from them, one  for the vegetables and the other  for the salad.
I lined a baking sheet with foil, greased it lightly, filled 17 tortillas; I use the soft taco size which are the smaller size, I add a sprinkle of cheese in each and baked at 375 until golden brown.   I use a Mexican blend cheese , I don’t use taco blend , because it seems that it is seasoned  and I’m not sure that I would like the season that are used  with that particular cheese blend.

  • Hi Tammy that is wonderful, about the cooking! James and Dr.Seuss and even Amelia have a special bond we are extremely blessed! They are not related but they do considered each other family.

  • The salad is yummy and always requested;I also do an avocado watermelon combo in the summer…hey did you notice that coats were worn during our Easter Egg Hunt ….BRRRR do I dare put on my flip flops and say"It's spring somewhere!!!!!" LOL!

    What I love about your cooking is that it looks as if you cook according to the healthy ingredients you see at the market and then plan your meals around them, which is what I believe a true cook does. Like Tammy, you make me want to cook! And to not make it such a production but just do it.

    You might even make me actually attempt artichokes someday. Can you believe I've never eaten them, only tried the canned hearts and I spit it out. Are artichokes an acquired taste or do the fresh ones taste nothing liked the canned?

  • Thank you so much! I just got back from lunch; my sister took me out for sushi I had the most amazing salad; tonight we will be home and maybe go out tomorrow night celebrating bday and our one of our official family day! Thank you really you have no idea how much your kindness means to me!!!

  • Hi Dewena, That is exactly what I do; when the flyers are available I go through them and basically create my meals on what is on sale. I look at one flyer more intently and scan two other ones determining who has the better sales; then I decide where I'll shop for the week. You definitely need to try Artichokes they are healthy; I think they have iron,potassium and vitamin C and the calories are extremely low. The ones in a can I bought once to make an artichoke and spinach dip. Which was good but I was bummed out because wow ( I did this many years ago ) I was surprise to see that the canned artichokes were pricey… I believe over $2.00 a can. Now Trader Joe has them in a bag and in the freezer and the price is good I used these for an artichoke and spinach dip that was made in the crock pot. My sister's MIL saute's these in garlic and oil adds breadcrumbs and bakes them a bit to toast the breadcrumbs….but you can dip them in egg and breadcrumbs and fry them individually this will be the same way my mom makes hers. As for required taste when I eat artichokes water tastes sweeter thats it….Go for it! Enjoy Posted on Happy Belated Easter Everyone

  • Thank you Dewena we just got home from dinner and I am stuffed. This afternoon my son and I made banana bread just the two of us it was so special; especially that he is turning twelve in a month and I had no idea about 12 year old, even boys oh my that's all I can say about this age ( and he is the sweet one) anyway i digress the bread is on the counter and I cannot even look at it! I will go soon and serve it to them. They are dying to try it. LOLOL!!!!
