Crumb Cake/ Crumb Cake Cupcakes
I think a two-day weekend is never enough…..So much to do in such a short time!
We had another wonderful pizza party at my sister Silvana’s house, on Saturday!

So the coast was clear and I knew for this get together at Sil’s house I can bring dessert; in fact, she asked for dessert…the only rule was to make it nut free (my cousin’s daughter is highly allergic) so I decided that I can make Crumb Cake….love crumb cake!
I got this recipe many years from a coworker and you actually use a yellow cake mix.
Crumb Cake
1 box of regular yellow cake mix
3 eggs
1 1/3 cup of water
1 tsp. of vanilla
Beat the ingredients well and place in a greased 16×12 inch pan. Bake 20 minutes at 350
While cake is baking, make crumbs
1 ½ of cup of sugar
4 cups of flour
2 tsp. of vanilla
1 lb. of butter
Mix crumb ingredients well after 20 minutes of baking remove cake from oven, roll crumbs between fingers and place on top of cake; return to the oven and bake for 20 minutes or more. When completely cooled sprinkle with powdered sugar.
That is the recipe. What I do when I bake this cake is…well for some reason after the second 20 minutes it seems that the crumbs can brown a little more, so I leave it for another 20 minutes…
Last night I decided that an ordinary cake was boring and that with this recipe I would make cupcakes instead; try saying Crumb Cake Cupcake; how fun is that?
Anyway, I thought I goofed you know how in the recipe said to bake for 20 minutes take it out and place the crumbs on tops and bake for additional 20 minutes? Well, I did that for the cupcakes not realizing that cupcakes cook in 20-25 minutes …(I don’t bake much) so they come out of the oven and I am placing the crumbs on top thinking that the batter almost feels cooked…then it hit me, oh, oh! However, I continued piling the crumbs onto the individual cupcakes and hoped for the best. What choice did I have? Back in the oven for another 20 minutes( like I said I continue with the original recipe not shortening the time because they were cupcake) plus I added another 8 minutes to brown the crumb a little more… I took them out of the oven… well what do you think:
They were delicious, however, next time I make these as cupcakes, I will bake the 1st bake for 10 minutes and the second bake as long as it takes for the cupcakes to cook thoroughly and the crumb to bake until golden and lightly browned.

Marisa, these look delicious and easy, which is always great. Love anything with cinnamon and you have 3 tsp. here. I can imagine the aroma; sweet and spicy, so good!

brilliant! I have a wonderfully simply crumb cake recipe as well and have NEVER thought of making them into cupcakes. i love your idea! mine came from a co-worker that always brought this cake to our 'food days.' and it was ALWAYS the first to disappear. enjoy your weekend dear one!
